Ingredients

  • 6 eggs
  • 2 tbsp. mayonnaise
  • ¼ tsp salt
  • ½ avocado, finely diced
  • 1-2 slices of bacon, diced
  • 24 RITZ crackers

Instructions

  1. In a pot of boiling water, gently add eggs. Boil, 10 min. Drain and cool under cold running water. Peel eggs and place in a bowl. Using a fork or a knife chop eggs in bowl. Add mayonnaise, mashed avocado and salt.
    Mix well to combine.
  2. Top each RITZ cracker with a heaped tbsp. of egg mixture. Top with a slice of chopped bacon.

Recipe Tips

  1. Instead of mayonnaise try adding ranch or Caesar salad dressing.

RITZ Coated Crispy Veggies

Ingredients

  • 24 RITZ crackers
  • 2 tbsp. finely grated Parmesan cheese
  • 2 eggs
  • 1 handful of green beans, about 1 cup
  • ½ lb. asparagus1 red or yellow pepper, thinly sliced

Instructions

  1. Preheat oven to 400F. Lightly grease a large baking sheet.
  2. Using a food processor blitz RITZ crackers into crumbs. In a bowl combine crushed RITZ crackers and parmesan cheese. In a separate bowl, whisk eggs.
  3. Working in batches, dip vegetables in egg and then into RITZ cracker mixture. Place on prepared baking sheet. Bake in oven until golden brown and crispy, about 10-15 minutes.

Recipe Tips

  1. For vegetables that take longer to bake, like potatoes or carrots, blanch first in boiling water for 2-5 minutes, then dry and carry on with recipe.
Tuna Melt RITZ-wich

Tuna Melt RITZ-wich

Ingredients

  • 24 RITZ crackers
  • 1 can tuna, drained
  • ¼ cup mayonnaise
  • 1 celery stick, finely chopped
  • ¼ cup grated mozzarella cheese, packed
  • 2 finely sliced mini cucumbers

Instructions

  1. Preheat oven to broil. Place 12 RITZ crackers on a non-stick baking sheet.
  2. In a small bowl mix together tuna, mayonnaise and celery. Top each rice cracker with 1 tbsp. tuna mixture.
    Divide cheese on top of each cracker. Place under broiler until cheese has melted, 1-2 minutes. Top with sliced mini cucumber and another RITZ cracker.

Recipe Tips

  1. Instead of using celery try adding chopped apple to tuna mixture.
RITZ S’mores

Ingredients

  • 32 RITZ crackers
  • 16 milk chocolate squares
  • 8 large marshmallows, cut in half lengthways with scissors

Instructions

  1. Preheat oven to broil.
  2. Lay half of the RITZ crackers on a rimmed baking sheet. Top each RITZ cracker with 1 piece of milk chocolate.
    Top each piece of chocolate with a marshmallow. Place in the oven until chocolate starts to melt and marshmallows puff and turn golden brown, 1 min. Keep a close eye on the marshmallows as they brown quickly. Top with another RITZ cracker and squish.

Recipe Tips

  1. You can prep your tray of s’mores in advance. When ready to eat just pop in the oven and sandwich together to serve.
