Double Smoked Bacon wrapped RITZ Cheeseburgers

Ingredients

  • 20 thin slices ‎of double smoked bacon
  • 1lb medium ground beef
  • 5 slices of American cheddar quartered
  • 1 table spoon ketchup
  • 1 tablespoon mustard
  • Salt and pepper
  • 1 box of RITZ crackers

Instructions

  1. In a medium size bowl mix ground beef, mustard, ketchup salt and pepper.
  2. Portion out into 1 oz balls.
  3. Gently press down on the balls to make a patty slightly larger than a RITZ cracker.
  4. Wrap with double smoked bacon.
  5. Place wrapped patties into med heat cast iron pan and crisp for 2 minutes
  6. Flip and add a 1/4 slice of American cheddar
  7. crisp other side and place on RITZ cracker
  8. Garnish with lettuce, dill and tomato. Top with RITZ and serve!

Ritz king Crab bomb with sauce Remulade

Ingredients

  • 1lb center cut king crab meat cooked
  • 1 bunch chives
  • 1 box RITZ crackers
  • Remulade
  • 1 cup mayo
  • 2 tablespoons grain mustard
  • Juice half lemon
  • 4 splashes of Worcestershire
  • 1 tablespoon chopped chives
  • 1 tablespoon chopped dill
  • 1 tablespoon chopped parsley
  • 3 tablespoons chopped dill pickle
  • 2 splashes of hot sauce
  • Salt and pepper

Instructions

  1. For the Remulade, mix all ingredients ‎and set aside
  2. In a pot of boiling water quickly blanch and shock (ice bath)your chives.
  3. Very carefully carve crab into 1.5 inch lengths. Place a small teaspoon of Remulade on a RITZ and top with king crab. Gently tie a chive around the cracker and crab holding it in place.
  4. Place on platter and enjoy.

Ingredients

  • 1 box of RITZ crackers
  • 4lb pork belly
  • 3lb Heirloom tomatoes
  • 1 leaf lettuce
  • Sea salt lots
  • Black pepper

Instructions

  1. The day before serving take out your pork belly and leave in the refrigerator Uncovered!! Yes I know but it will dry out the skin to allow us the perfect crackling.
  2. 6 hours before cooking cover the skin with sea salt. Yes cover it. Please.
  3. Turn oven to broil and remove salt from pork belly.
  4. Place on a baking rack, on a baking sheet slide onto the lower rack of your oven. The top heat should gently cook your belly and crisp the skin. If your broiler is to hot switch to 450 regular heat and finish with broiler to make epic crackling.
  5. Remove and let rest for 20 min.
  6. Carve into thick slabs 1 inch by 1 inch.
  7. Place a touch of leaf lettuce on RITZ, then a slice of tomato a basil leaf and top with shattering crisp pork belly. Enjoy

Ingredients

  • 1 box RITZ crackers
  • 10 Slices ham
  • 2 tablespoons Dijon mustard
  • 10 slices Gruyere cheese
  • 1/2 cup red pepper pesto

Instructions

  1. Cut ham in half, cut cheese into quarters.
  2. Place 10 Ritz Crackers on baking sheet, spread with Dijon
  3. Add a slice of Gruyere and stack half a slice of premium ham
  4. Top with RITZ and then place another slice of cheese on top.
  5. Slide under broiler for 3 to 4 min until cheese is melted and golden.
  6. Garnish with a chunky pesto or a tart gherkin.
